Let’s Taco Bout How to Make Delicious Soft Tacos!

I know I have posted about soft tacos before, but these were seriously one of the best I’ve had at Taqueria Tsunami and I just had to re-create this simple, delicious and healthy recipe at home!

Servings: 2, Calories: ~320 for tacos, ~550 for tacos and chickpea salad

Ingredients for tacos:
Cilantro hummus
Grilled peppers and onions
Shitake mushrooms
Roasted corn salsa
Sesame soy vinaigrette
Sesame seeds
Shredded dark green romaine lettuce
White/corn/wheat soft tortillas

Ingredients for garbanzo bean salad:
1 can garbanzo beans simple truth (organic)
Red onions diced
Tomatoes diced
Green onions diced
Cilantro
Cucumber shredded
Olive Oil
Black pepper and salt

Directions:
Mix the above together and wa-la!
