Pizza pizza!

Who isn’t OBSESSED with pizza?! I used to be a fanatic of cauliflower crust pizza and would buy the frozen one from Costco. I’ve made a cauliflower crust pizza at home before, but I started searching and experimenting and have made all sorts of pizza crusts from zucchini, spinach, sweet potato to cauliflower! The best part- Leia is OBSESSED with it as well as it is chewy and soft so it is easy and fun for her to eat and the hidden veggies are a win win. Pretty much you can take any veggie and form it into a crust, there are many recipes out there, but I like to use 5 ingredients, here’s how:

  1. Prep the veggie(s):
    Shred (zucchini, potatoes)
    Chop (broccoli)
    Rice (cauliflower)
    Mash (potatoes, peas, carrots)
  2. Binding agent(s):
    Lentil flour
    Quinoa flour
    Oat four
    Chickpea flour
  3. Taste and moistness:
    Shredded cheese
  4. Spices:
    Taco seasoning
    Garlic and salt
  5. Top with:
    Rao’s pizza sauce
    Pizza blend shredded cheese
    Any other toppings

Mix everything into a big bowl and lay out parchment paper (spray olive oil on the paper) on a round pan. Roll out the ‘dough’ with your hands and spread. Bake on 375 for 15 minutes and then flip the crust over and bake for another 15 minutes and then add the sauce, cheese and toppings and turn off the oven, but leave the pizza in there and let it bake!
