This chili has an amazing detox effect and is packed with nutrition. Filled with protein from black beans, daily dose of veggies from tomatoes and onions, flavor from amazing spices and healthy fats from avocado. Anything with avocado immediately catches my eyes! Servings: 2, Calories: ~400 calories/serving
1 can black beans
1 red bell pepper
1 can diced tomatoes
Garlic and scallions
Salt, pepper, oregano, cumin
1. Wash and cut all produce and sauté the garlic, onion, scallions and bell pepper with olive oil for about 5-6 minutes until lightly brown.
2. Add oregano and cumin to the vegetables and sauté again for 1 minute.
3. Add black beans and diced tomatoes and simmer for 20 minutes. Add salt, pepper, chili powder and other spices to taste.
4. Garnish with avocado slices, cilantro and sour cream.
