Mouth-Water Monday: Spinach Munchin’ Dip!

One of Little Blue Book’s loyal readers, Sherry Hansard, sent me this recipe! I usually don’t like spinach and artichoke dip, but I wanted something creamy with a good texture. This dip recipe includes only spinach and is very tasty! Thanks again for sharing Sherry!

Servings: About 10 (will vary), Calories: ~123 calories/serving

Ingredients:
1 package Knorr soup mix
1 box frozen chopped spinach
1 cup organic/lite mayonnaise
1 16 oz container of sour cream
1 small can of water chestnuts (finely chopped)

Directions:
1. Prepare spinach according to box instructions and squeeze all of the water out.
2. Add the rest of the ingredients and blend together.
3. Place in a bowl and refrigerate for several hours before serving.
