Mouth-water Monday: Creamy Corn!

mexicancornsalad6This Latin-Mexican grilled street corn is to die for- especially during the holidays! On top of that, it is healthy as well for a meal or a side dish! I first tried it at this amazing restaurant in Scottsdale, AZ called The Mission and decided I needed to make a healthier version of it!

Serves: 4, Calories: ~200/serving

3 cans sweet corn or creamy corn
1/4 cup lite organic mayonnaise
1/4 cup sour cream
1/2 cup crumbled cojita cheese (feta can substitute)
1/2 tsp chili powder
1 tsp finely minced garlic
1/4 cup finely chopped cilantro
1 lime or 2 tsp lime juice
+/- chopped onion

1. Heat up the corn on a skillet until lightly brown with some oil
2. Combine mayonnaise, sour cream, cheese, chili powder, garlic and cilantro (and chopped onion if you’ve decided to use it) in a bowl and mix
3. Mix corn in the bowl
4. Add cheese, cilantro and pepper for garnishing along with lime/juice
