Mouth-water Monday: I yam a sweet potato!

Anyone who knows me know that I am a sucker for sweets and always wanting to eat dessert for dinner! One of my fall obsessions is eating baked sweet potatoes for dinner with some brown sugar and pecans! Sweet potatoes are very healthy- filled with tons of nutrients and the best part- they do not cause spikes in sugar!

Serves: 2 for dinner, Calories: 200-400 per sweet potato (2 halves)

Ingredients:
2 large sweet potatoes
1/2 packed light brown sugar
4 tbsps unsalted & softened butter or honey
1/2 cup pecans

Directions:
1. Preheat oven to 375
2. Poke the sweet potatoes (after cutting in half) with a fork to allow for little holes to form and place in oven. If it is really hard, then sometimes I spray some water on them.
3. Combine brown sugar, butter or honey and pecans in a bowl and mix. About half-way thru of 25-30 minutes, take out the sweet potatoes and place mixture on each half and place in oven.
