Mouth-water Monday: Cashew Cheese

cashew-cheeseCashew cheese! Say what?! Yes, there is such a thing and it is soy and gluten free! Cheese that is made from cow’s milk is actually very hard on the body to digest and can lead to gastrointestinal problems for many people such as constipation. Cashew cheese is a healthy and delicious alternative. You’ll be left with wanting more! Use it as a spread, sauce or topping and substitute it for any cheese you may use in your food:

Calories: 1 tbsp = ~30 calories

1 cup cashews (soaked in 3 cups of water for 2 hours)
2 tsp lemon juice
Black pepper
1/2 tsp salt
1/4 cup water

1. Soak the 1 cup of cashews in 3 cups of water for at least an hour and preferably 2 hours.
2. Blend together cashews, lemon juice, salt and black pepper.
3. Add water and continue to pulse until a smooth paste has formed.

(Note: Oh, and remember to turn off the blender when you are scraping the yumminess off of the sides of the blender. This will help avoid splatter on your ceiling, clothes and hair. Yes, you know you have done it).
